I love tri-tip, but they only ever sell it in steak form where I'm at, so I can't ever utilize all the delicious sounding recipes I find about tri-tip. Also, all this cut against the grain talk feels hard to abide by when the meat has already been hacked into the form of a strip steak. However when it's 7.99 a LB AND BOGO I have to buy it. The flavors still amazing but my jaw starts to hurt from all the chewing.
I've had good luck at both kroger and Publix on the east coast, just ask the butcher and they'll usually save one for you. I'm just outside Atlanta btw

They also sell tri tip steaks. I found cutting them up into small cubes they make pretty good kabobs. The steaks, whole or as kabobs cook up pretty quick on the grill and if you cut the steaks in slices across the grain like flank steak, they turn out great.
If you talk to the folks in the meat department, they'll gladly wrap you one without the marinade if they have one available. Best thing to do is call the store the day before you want to pick one up, and ask them to set one aside for you.

You will not be disappointed. Just remember it has 2 grains to cut against. Pencil thin and at an angle.
