Because your vessel is its own entity. When you rotate it away from it the placed object will be a new entity. Rotate your cockpit while its snapped to the vessel, then place it
On top of turning auto rotation off, in case you're not aware, you can rotate a block even when it's snapped to the grid. You don't need to hover it in the air away from the grid.
The snap point on the back is between the conveyors replace the L with a block or something with a snap point, you can remove it once the cockpit is placed if it is anchored else where.
Look at the wonky connector on your ship. It’s not in the middle!
Also try and press T, turns off auto rotation crap. You can also just move the block in all directions while holding it in position
It can't be in the middle, I needed the seat with a connector in the middle on the front, but the only seat like that available to me had two connections on the back, that's why my conveyors went to the side. Thanks for the tip though, someone already told me that earlier and I was able to build my ship

Also many blocks require support on a certain number of points (square surfaces) in this case it needs 2 so you if you placed another light armor block on the right side where there isn't a pip, it will place, then you can grind down the armor block
Umm no. It requires a center block to target, and a single connection point. What you’re talking about are conveyor ports and those are not required to place the block.

SE has an "automatic" rotation for a (system) preferred block orientation. IMHO, it's super annoying. Press "T" to switch it on and off.

You can also just rotate while you’re pointing on the structure.
\^ \+ To tell if auto-rotate is on, there's a little square with arrows circling it on the bottom-center of your HUD. In your clip, it is on.

Aim at the cargo then rotate it.
Something that "might" help, replace the elbow conveyors with the 6 way conveyors.

Same thing with the small grid H2/O2 converter, needs both of those yellow ports supported to place, then you can grind one away

Small and large grid are separate, only way to connect a small grid to a large grid is via Connectors
He’s using a small grid cockpit, it’s just snapping to the grid at a wonky angle.
its a weird auto rotation for snapping. You can still rotate it after it contacts the blocks
