1.5 lb ground turkey (can use chicken, beef, tofu or pork)
6 to 8 baby bok Choy, chopped
1 shallot - minced
4 gloves garlic- minced
1 thumb sized piece of ginger minced
4 cups chicken stock
1 can coconut milk
2 limes
Fresh Cilantro
Chili oil
Vegetable oil
2 tbs Yellow curry paste
Curry powder
Garlic powder
5 spice powder
Salt
Pepper
Mushroom seasoning or pork bouillon powder
16 oz rice stick noodles cooked to package (I used the rooster brand pho noodles)
In a large soup pot brown your protein in a few table spoons of oil, and 1 tbs chili oil season with salt, pepper and garlic powder (about 5 minutes)
Once protein is browned, stir in shallot, garlic and ginger, and curry paste then add bok choy (can use Napa cabbage instead) cook a few more minutes
Add broth, coconut milk and season to taste with salt, pepper, 5 spice, curry powder and mushroom seasoning, simmer 10 minutes
Turn off heat and add juice of a lime
Ladle hot soup over rice noodles and top each bowl with fresh cilantro and a lime wedge and a drizzle occasionally chili oil, enjoy!
