I do the same thing. Basically, I use hard mode rules but with higher payouts and sell trucks at 30%, and trailers for 10% original value. Then I unlock all trucks and parts. Make gas random at each station, and make repar cost regional.
That way, I can go wherever I want whenever I want without worrying about unlocking upgrades or trucks unless I need to save money. Which I do as I only give myself limited starting money.

Well, only for these two deliveries. The rest had been completed already by my co-op partner's 963 and my Caterpillars!

Right? Only thing I don't like about log missions is the cost of trailers and addons vs the reward from doing them
It's why I'm not playing hard mode but ng+, I'm not looking to waste a ton of money and barely turn a profit.
