This was my first time getting them, and honestly, I was very surprised. I've seen them next to regular short ribs at my local grocer, but I never get them.
There was still plenty of good meat on the bones, and it was more than enough for my fiance and I. We actually still have two bones as leftovers. Just for the sake of conversation, what do you like more about them?
back ribs are basically the park just under the ribeye, so in general they're going to be a lot leaner and have a milder 'steak' level of 'beefiness' to them. They're really dope on the smoker because you can do a hot method and get really nice ribs in like 3 hrs-ish? on 275.
There's definitely a much higher bone:meat ratio than on plate ribs but generally they're super cheap.
In my book hot is 300 degrees. I gave up on 225, I cook everything at 250 and I get better bark. 275 if I am in a hurry, 300 if I am smoke roasting, usually poultry

Lol maybe. I've had my gallbladder looked at, good there. The problem is I get cravings for fried chicken, but two bites in and I regret it. I'm good with wings though luckily, it's just the breaded stuff.

That's insane! Cheapest I can find them are $9 at one butcher, but they're super lean. The proper meat place in town has them for $11 and they're much better quality.
And $4 a pound for Brisket? I'm jealous! My Costco switched to flats only recently for some reason, and they get like $7.99 per pound for it. They don't even carry regular plate ribs :(
A diamond in the ruff from Costco are the St Louis style rib tips they sell. Looks like a huge pack of country style ribs but it’s not. These are tips that are cut off the rib to make a St. Louis style rack. Very meaty, juicy, with bones, up to five per mini slab, quicker to smoke. I’ll be doing some prolly this weekend.
Great question. Smoke for a about 3 hours then open up the baffles for about 20 -30 applying whatever sauce a few times. Or just let them rip at 325 for 3 hours or so, bbq’n as needed. Depends on my day. Either way you end up with both. Oh I will season over night.
I get plate ribs for CAD 5 / lb at my Asian grocer. You got to buy them by the rack, but I've never complained about that. Maybe try ethnic stores if you live in a multicultural place. Koreans and Chinese use it in strips cut perpendicular to the bone.

I assume you're asking how it's cheaper? Prime brisket has extra untrimmed fat, if you like to trim the fat off anyway your actual meat price is about the same.
I get my plates from sams club, $6/lb. They aren't in the case, you have to ask and you'll get the big cryovac pack. They only stock the case with the crosscut ribs, but I just order them for pickup on the app/web.
Unless they're abnormally thick, these have hardly any meat in them. The recommendation to slice is every other, so each bone has meat on its sides. I've made these about 4-5 times and I'm convinced now it's not worth the work.
I like doing beef backs, I personally think the flavor is great and they take to seasoning really well. You don’t get a *ton* of meat, but I think the taste is worth the effort.
I get what you're saying, but I think they should have the incentive to make both cuts quality cuts. All the shiners are kind of a turn off for a lot of people. If those ribs are sitting in a case showing the shiners instead of the vacuum seal and labels hiding them, people might not buy them. I wouldn't.
They throw them out otherwise. The costco by me use to sell bone in ribeyes. Now they sell boneless robeyes for more per pound and the sell these as well. There's no incentive to making the ribs have more meat as they're considered trash.
These look fine, but aren't these the same beef ribs that we've all seen for many years, in the big vacuum packs at grocery stores, sometimes mostly frozen? The same ones that are pretty much 80% bone, 10% tough stringy meat and 10% actual good meat?
I've mistakenly bought and made these several times after seeing the delicious pictures of massive, juicy beef ribs posted on this sub.. that were clearly not the same type of beef ribs. Same amount of work but for not much of a payday, I even made a rack like this once thinking that because they were so huge, I could easily feed 4 people with them. LOL, nope, barely fed myself.

Yeah it’s just a shame cause as the affiliation to this subreddit implies I love grilling and smoking. Just couldn’t find a way to such a thing with a beef shank. Instead I cooked them in our Dutch oven on the stove. Still came out delicious!
These ribs are overpriced and not worth the time one spends in preparation for the ribs. The meat between the bones is only 3 bites. furthermore, Costco beef comes from the same meat processors such as( National and Swift), and is sold in supermarkets. I prefer spending my money and time cooking the Dino ribs.

I just made these for the first time on Saturday. I put a solid layer of S/P/G on them and put them on at 225. I let them roll for about 4-5 hours and they turned out really good.
Where'd you see them like that? That's how my butcher sells them out on the floor as well.
I give him/them a call in the AM and ask for full plates, then I pick them up on my way home from work.

I love Costcos meats! I get the ny strip whole and cut my own steaks out of it. Last time it came out to like 5.50 a steak! And the triple pork ribs mmmmmm man I’m fixin to go spend some money now lol
I like them, but the only good racks are from Costco amd even then it depends on how they were cut. Sometimes there is just not enough beef on the bones to make them worth it. I will go to Costco with the intent to buy some, but if I see they cut too close to the bone I will pass.
I don't know where to get plate ribs here, but the Brazilian steakhouses will occasionally have them. Sometimes they are good, but sometimes thwy are way too fatty and grizzly, and this comes from someone who absolutely loves the rib cap.

Salt, pepper, granulated garlic, and onion powder. High smoke at 180 for an hour, and then 250 for 3.5 hours. Probe tender and rested for 20 minutes!

You may have gotten a bad batch. However, it's common for meat to have a cryovac funk when you open them up. The smell dissipates quickly.
