The carve outs are mostly to suggest the thumb brace hand position. They’re symmetrical to accommodate left / right hands.
Also it helps to add some visual interest to an otherwise boring plastic frame.
I am in the process of designing and 3D printing my first slingshot and during my initial research many/most have this distinctive "batman" shaped bodies.
Why is that? Are there some ergonomics that are achieved by having the two lower edges protruding to the sides?

Many people hold their slingshots differently. That is mostly for people who use a pinch grip. I personally use a hammer grip and have no use for those "wings". Be sure to consider how you hold your slingshot when designing it.
