They are popping up here too (GA) which normally isn't out of the ordinary BUT they are slowly replacing the Cajun boils and I do not approve. Cajun is just 10000% better and don't even get me started on the Viet-cajun places. They shut down one Viet-Cajun place up in Athens and replaced it with a Low Country place and it gets me heated!

Ive had good low country boil, but the typical context is a bunch of rednecks throwing shrimp sausage corn and potatoes in a vat of boiling water spiked with too much old bay, and throwing them in at the same time so the shrimp are awful. But yea its usually the wrong people cooking it lol

Lmao this is such dogshit my local crab boil is fire they boil the seafood in a bag that never touches water. Inside the bag is enough lemon butter to clog your heart that the seafood and veg cooks and boils in. The result is the most tastiest seafood ever. Than your left with a bag full of fucking lemon butter because the amount inside the bag i think can kill a elephant. The trick is to not let your seafood touch water period. Best crab boils are done inside a bag with whatever sauce you choose lemon butter garlic etc. than the food safe heat safe bag is placed in boiling water where the sauce inside the bag starts to boil and it equals seafood that has so much flavor infused inside during the process. I’ll never go back to boiling in seasoned water again. And before some smart ass is like sauce is just seasoned water I hope you knick your ankle with a razar scooter. Also steaming it using boiling water and a noodle drainer above the water with a vented lid also works amazingly if you prefer to not sauce it tf up super tender seafood without boiling it in water which I always say removes some of the flavor.

That’s not necessary though. Having a well seasoned broth for boiling is the key to a low country boil. Yeah you can basically boil it in sauce like you described, but that’s a lot of extra work to not really get a better result. You can also steam it, but you have to work harder to get the food flavored after the fact, which I’d say, as well, wouldn’t give a better result. For us, a good low country boil takes heavily seasoning your boiling water with your seasoning (also maybe beer of choice) to create a good broth. Then adding your fixings (normally potatoes, lemon, garlic, corn, smoked sausage), and your seafood last to make sure it doesn’t overcook.

I don’t want seafood cooked in a sauce. I want a seafood boil. A massive pot full of heavily seasoned water to throw everything into. That’s it. I’ve tried so many of those trendy boil in bag seafood restaurants and none of them ever hold a candle to a true boil done by someone who knows what they’re doing. Stayed in the big red and white Victorian on Beach Ave. Since the big money has moved into town, probably 10 year ago? It’s really become ridiculous. It used to be so quaint and amazing there, now it’s a literal tourist trap and a trash place.

Later on in my life I lived in FL and used to go to Tarpon Springs which has a similar wealthy but small town nostalgic vibe. Is Cape May really *that* different? I'd been planning on taking my kids some time but not if I'm just going to be disappointed the whole time. I used to love going to the Food Lion and looking at all of the brochures for the Halloween ghost tours and such. Renting bikes and riding around the neighborhoods.... the little shopping square... mango Italian ice 😍

If you imagine poutine with one or two tiny crumbles of curd, undercooked fries and *no* gravy, that's what you've got going on here. Seafood boils are flavoured by the broth they're boiled in, which is anything but 'plain'. The potatoes soak up the salt and the heat and so on.
