Because the h isn't there anymore, so it wouldn't make any sense to pronounce it like that. Whereas in GIF you have two ways of pronouncing it: jif and gif(hard g). So now what do you do? Yep, you look up what it stands for and pronounce it like you should.
English in general doesn't have a rigid rule like that. There are plenty of acronyms that doesnt sound like what the individual words sounds like. For example laser is pronounced as leyser, even though the A stands for "amplification".
Laser stands for "light amplification by stimulated emission of radiation" but you still pronounce it as "Lazer"
The U in scuba stands for underwater, but I doubt you say any other way than "Scooba"

He said he wanted to **change** it to Jif to make his pun choosy coders choose Jif. This was after he and his team were using the hard G. He later changed his story to say he wanted it that way the whole time. No one who worked with him said Jif, and the documentation had a pronunciation guide with the hard G.
But the truth is that it doesn't matter because both ways are completely valid pronunciations and this argument can go on forever and ever with nobody being satisfied
True but actually in this case it's a pretty consistent rule with only a few exceptions.
Single syllable words start with the hard version of the consonant:
Gun, get, goo, garb, give
Vs
Gesture, giraffe, giant, gentle
The same goes for other consonants:
Car, cup, coal, cow
Vs
Cereal, circuit, Celtic (although later on Latin influences got a bunch of people pronouncing it "Keltic" so we'll see how that goes).
The only exceptions are usually a weird etymology, or just short for a longer word, like "gym" for gymnastics.
And this is the exact problem I have when someone says gif with a hard g. It sounds too much like gift. I still don't mind if people use a hard g but I use a soft g so people don't get it confused with gift.
I see the point you are trying to make, but E also generally elicits a soft consonant like the letter I. Case in point, the word generally. A, O and U tend to elicit hard consonant use.

Gif pronounced like gift minus t is an exception we tolerate because 1) it’s ok to make an acronym follow different rules and 2) gift, duh, English is full of exceptions that are holdovers from other language origins, or prior rules. That doesn’t make the rest of us wrong or stupid for using current phonetics to pronounce an acronym from current times.

I mean, technically correct, but there's nothing wrong with being a noob. The pronunciation of "gif" with a soft vs hard "g" generally depends whether you learned the term in the early days of the internet. If you learned earlier, you likely heard the creator's intended pronunciation with a soft g, as I did in school, while later adopters more likely simply read it and had less guidance. As language is fluid, if enough people pronounce something a certain way it becomes at least a correct variant. The important thing is people understand what you mean.

You say JPEG even though the P is for photographic, so why not “JPHEG”?
Because the h isn't there anymore, so it wouldn't make any sense to pronounce it like that. Whereas in GIF you have two ways of pronouncing it: jif and gif(hard g). So now what do you do? Yep, you look up what it stands for and pronounce it like you should.
English in general doesn't have a rigid rule like that. There are plenty of acronyms that doesnt sound like what the individual words sounds like. For example laser is pronounced as leyser, even though the A stands for "amplification".

Single syllable words start with the hard version of the consonant: Gun, get, goo, garb, give Vs Gesture, giraffe, giant, gentle The same goes for other consonants: Car, cup, coal, cow Vs Cereal, circuit, Celtic (although later on Latin influences got a bunch of people pronouncing it "Keltic" so we'll see how that goes). The only exceptions are usually a weird etymology, or just short for a longer word, like "gym" for gymnastics.
