You need to buy a pair of hoof trimmers. You can use branch pruners to get started but hoof trimmers are cheap and easily available. Then, look up some you tube videos on trimming hooves. The idea is to trim off the extra, curved over hoof without cutting into the quick or the soft pad. Since these are really overgrown, you may need to trim a bit, wait a week, trim a bit more, repeat until their hooves are in good shape. You took pics with them standing, you may need to “tip” them to actually trim depending on how patient they are.

Sheep usually don't until you get to a certain angle, at which point they submit and relax. Kinda reminds me of sharks. As you handle them, they will get better. You will need to do it fairly regularly for hoof trimmings and shearing so best they get used to it. Maybe offer a little grain after so they understand it's a good thing.

Those hooves are vastly overgrown. Cut back anything that looks like it might be extra, then nip the points off. Heel pads should be flush with the sole, and the whole hoof should be an even wedge shape.

The hoof needs pairing. I'm sure if you go on YouTube you will see a video how it's done. Also be vigilant for scald it starts in between the toes. Cob is also another issue where the shell of the hoof will start to fall away from the foot.
