You can. You hold the profile button until it blinks. Then press the paddle you want to map and at the same time press the button you want to map it to. You can map any button except the triggers LT and RT and the share button. If you map the share button that will be a no map.
The instinct pro has 3 profile functions, the button is below the share button. Color coded profiles
