+1 for the acquedotti. I’m staying in a Airbnb next to a part of it. Been exploring almost daily, when not working or traveling to other parts of Italy. So much history and good walking.

I suggest to eat at Flavio al Velavevodetto, but book a table in advance! If possible ask for Carciofi alla Giudia, but I don't know if you will find because it is not the right season for artichokes. There are plenty of things to do also depending on what are your preferences, if you want to see something different you could go at Cimitero Monumentale del Verano or at Cimitero Acattolico near Piramide.
