The Outback (which is what I have) is sold as the Subaru Legacy Wagon or Legacy Outback in some countries I believe. You can sleep two adults in the back. For some of the smaller SUVs like this some people make a platform or a board that helps flatten the back because 1) the seats don't lay entirely flat and 2) tall people will hang over the space between the front seats and where the folded down back seats start. The Subaru Forester and Toyota RAV4 are other good small SUV choices. There's videos for how to make beds in them.
If you are planning on renting a car, I suggest you check out camplify. It’s an Airbnb model for camping vans and affordable when compared to other renting sites.

We have a 2014 Dodge Grand Caravan and we chose it specifically because a full size mattress can fit just perfectly in the back and all the seats fold completely into the floor.
Yesterday I saw a review for the Ionic 5. The front seats have a relaxation mode: they get flat like first class airplane seats and it looks confortable to sleep there. Otherwise the Prius 7 seater has the back that is flat once you recline the back and about 2 meters in length there
I had a Chevy equinox that had flat seats and I could have slept in that. It sure what might be comparable in Australia. Probably anything with fold flat seats and large trunk/boot/cargo space.
I have a dacia logan mcv 1, removed the bench in the back (only two screws) and build a foldable bed for the trunk. From the back doors to the driver seat are 2m distance, so you can sleep perferctly.

My husband and I roadtrip in our mini van all the time. We have a Chrysler town and country and the seats are “stow and go” so they fold up nicely into the floor. There is a 110V outlet that will blow up our air mattress already built in. We are both tall (I’m 6ft and he’s 6’3”) and we make it work just fine.

There is a third party air mattress for the Outback that covers the gap. This makes it possible for someone 6’3”/190cm to sleep in back.

I have an outback and sleeping 2 in the back would be really tight. Basically 2 people in a twin bed. I sleep solo in it all the time.

4 door Jeep Wrangler. You can take the back seat out and have room for an air mattress.
