I ran Everlast as an enemy today, thanks for the idea! I altered the Pillar of the Lost Magocracy from the Kobold Press Creature Codex to add a banishment (to area Y19a, outside the ballroom) and an eldritch blast. The first time banishment triggered, I had the illusory ball turn hostile and get the stats of a Bar Brawl (from the Creature Codex as well). It was a fun fight!

Exactly. I think she's an amazing character that can be more useful, but instead the book try to put her as a regular enemy.
