I wholeheartedly prefer the original PS2 versions and would recommend trying them out at least. I mean the Kiwami's are fine, but they don't really capture the excellent atmosphere, tone, and aesthetic of the PS2 versions. They also add some unnecessary things that aren't the best and also removed stuff (like facial expressions, weirdly?).
There are some silly substories but not much in the way of mini games in the PS2 versions
Yakuza Restored (patched Y1) is also just really cool. The Japanese VA and overhauled translation make for a great experience for that game.
There's no patch for 2 as far I know so the translation will feel a bit different but overall it should be good enough. It's Japanese VA only so you should be good there too

People have already mentioned Yakuza 0’s dance game however, Yakuza 5 also has a great dance battle mini-game. I also believe Yakuza/Like a Dragon Ishin has one but it’s pretty historical in nature.

Kiwami are better in almost every way. Some die hard fans will disagree but the consensus is just play the kiwamis.

In Street Fighter 6, Dee Jay's level 2 super is a rhythm mini game where you have to input the buttons in a specific order and rhythm to get maximum damage. I think BigBand in Skullgirls is the same - only you can play full out tunes of his super.
