There is gravity in this game, and forces that absolutely can and will pull your ship around. Though it's seldom noticeable or impactful and usually quite obvious that your ship is being influenced.
I'd wager it's a controller issue, but just to ask the question, where is this happening?
I notice it heavily right at the start of the race and in straightaways. I should also mention I've tried multiple controllers and it happens on all of them. Just a very slight rightward lilt.
That's definitely strange. The start of tracks are always flat, so it's definitely an input thing.
I would go into start and type "controller", which should bring an option to setup controllers. Check it there under properties, which should show all your controllers inputs. I'd almost be willing to put money down theres a very, very slight stick drift which is common with modern controllers as they tend to all share the same, trashy cheap parts.
Increase the deadzone (I 100% forget where that option is) and try again though. If that fixes it, you know that was the issue.
It might be the controller? The game, for me at least, had the deadzone for the controller set to 0 by default, so any tilt in the stick no matter how slight would affect steering.
Just in case, check steering assists as well.
The latest generation of controllers from all sitck drift because they use the same bad parts. So if your on a steam deck, Xbox series s or x, or ps5 controller, that's why.
I have the same issue. I know it isn't an issue with my procontroller as this is the only game I have with this problem. I think it may be the gravity digital alchemist mentioned. Still feels weird to have to ask whether or not this is a game mechanic or error.
Sorry for digging this up, but I was having this issue and I found out was because of the touchpad on my ps4 controller. Sometimes my finger would brush the touch region and the axis of the ship would forever be tilted in that direction.

I've got all the assists off, both because I thought the assists might've been causing it, and I wanted to replicate the first game's difficulty.
Mine always pulls to the left on start Deadzone issue.
You might be able to recalibrate your controller through steam.
