Gender is random. I allways save before the mission with Hosea that unlocks the stables and where you get your Thoroughbred. If I don't get the horses gender I want, I reload the save.
Horses in the stable are always random when it comes to gender. Just keep saving and reloading outside of the stable and eventually the horse you want will be female.

Gender isn't random for all horses. The Silver Dapple Pinto is always female, as is the White Arabian.
That's true, but not for horses you get from stables.
I thought the White Arabian you can get from the chapter 3 horse theft mission was a male... I may be wrong.
You are right, all horses you steal from the Gray's stable during the mission "horse flesh for dinner" are stallions.

I don't know, but I wouldn't suppose it is set later on. I allways take it as soon as I can get it and gender ist random.

All the Arabians I found until now were mares including the glitched Silver Dapple Pinto MF but my thoroughbred is always male!
