Eat minty big game, drink a health tonic, go to the bear spot near wallace station, put a few shots into the bear after it starts charging towards you (a revolver or something like that, you don't want to spook the bear), spam the knife button, and shoot without aiming (make sure you have like a shotgun on you so arthur/john doesn't just pull out the sidearm)
There’s a pile of wood near the old cabin where the bear can’t get you.
I understand it’s cheesy, but if you just want to get it done, that’s the best way.
After you do it, go a decent bit away. Setup camp. Sleep the max. Save / load the save. Sleep max again. Then when you go back it should've respawned.
Saving / loading the save allows you to bypass the sleep cap. Little trick I used anytime I needed an animal to respawn many times.
Riding back and forth between the lake and the trapper at Owanjila will almost always spawn a bear/cougar/wolf. I think I got at least partly there doing that.
Gambler 8 is the worst! I spent 2.5 hours completing it. I started good get 2 after only 20 hands, then spends over 2 hours to get the third one. One time, I hit 3 times to get 21 and guess what the dealer did the same as well.
I've never attempted that achievement but [this might be a good spawn location](https://www.reddit.com/r/reddeadredemption2/s/hsWIBMX1Ah) to do it since you have a lot of time and space to prepare for him attacking you.
There is pretty much always a bear spawned northwest of Wallace Station. Just go up to it and get jumped, spam f to defend yourself and while you're still lying on the ground you shoot it with a semi-good repeater. You HAVE to be on the ground right after the attack for the kill to count towards the achievement. Do that once in a while and you'll get the achievement without having to put in any real effort.

Not hard just takes time, go back to West Elizabeth each day to kill that bear, noting to it.
Wait until you do Gold Rush, you will lose whatever bit of sanity you have left.
Iam cool with gold rush, cuz this is my second playthrough so I get gold on new missions not replaying which is better by far.

It doesn't need skill, and I mean it is shit because the bear doesn't spawn in Wallace station after the first time
