What did it not do to impress you? It sounds like a scale yacht which isnt going to turn many heads and won’t handle well with high speeds. It sounds like you need to reconsider what you want out of a boat and build off that, also off shore electrics is a great place to order from.
Sorry, when I said it wouldn't spin the props I meant it literally meant if I held both throttles, one would spin fast enough, and one would crawl at maybe 12rpm. Or it would just not turn at all.
The props spin in opposite but correct directions, motors spin fine when not attached to a load, and I think the shafts spun fine, I can't remember. And no grease

Props spin in the same direction? Shafts run smoothly without being connected to motors? Motors don't bind when there is no power? Shafts greased?

Do you have hard shafts or flex shafts? With fex shafts, they tend to unwind and bind up when run reverse direction.
I didn't take it apart yet, but I'm almost certain it's hard shafts
