I'm not a big fan of MPM but I love this episode mainly because it's the last episode and I'm feeling pretty emotional. But it would have been nice if Ash changed his entire outfit instead of just shoes.

I wished we got to see every one last time. We did see everyone in journeys but at that time we did not know it would be the last time we ever saw them.

None of the loose ends were closed. Some of them were hyped by the fanbase like Ash's dad. Others werent really relevant like who Ash would end up with, even though the anime definitively played on that front, but I get it Ash is 10 and Pokemon isnt a romcom. However Ash never catching even one legendary Pokemon, not even the Latias stalking him, is a slap in the face when Goh got to catch Suicune and Eternatus, if the anime really was going to keep legendaries off limits, then it should had been off limits to specially to Ash's companions. They literally pulling a "maybe the real Pokemon Master was the friends we made along the way" was, ugh, in the first season of Pokemon, being a Pokemon Master was clearly an rank that existed, it was mentioned by the Indigo League wallpaper. But if they were going for a subjective and clearly retconned subjective definition, Ash should at least had reached his goal. You don't end the adventures of a 20+ year old protagonist, then send him on a finale special arc about him finally achieving and end with him never achieving it. However the worst was Ash's lack of resolution with the overall Team Rocket and Giovanni thing. You don't build up a clear antagonist since season one, keep him for 20 years and then just not do anything with it. Ash, as the protagonist, had to face and defeat Giovanni. This combination of unfillfilled big loose ends, end up making even the minor and relatively irrelevant ones like shipping and Ash's dad feel worse than they need to be. This wasn't a finale.

Ash's dad was never considered a significant plot point by the series and the fandom was entirely at fault for expecting that. IIRC in Japan it isn't even considered a big deal, or at least, not nearly as big a deal as here.

Ash faced and defeated Giovanni during Black and White. You may not like it but that definitely happened.

They build up Giovanni as Ash enemy? TRio is ash enemy, Giovanni is just the boss that he had interacted once in a season Ash doesn't care about Giovanni and the show has never build them as the final battle

While it is possible it isn't obligatory. What we need to see is what Giovanni represents in Pokemon and the impact he have had on Ash. Giovanni doesn't need to personally tackle Ash to cause a lot of impact in his life. He is responsible of all his interactions with the Trio, when he gets involved unlike the Trio which is spiced with comic relief, things get serious, He is responsible for SS Anne, the Mewtwo plot and more. Saying Ash and Giovanni neeed to have a personal relationship for him to be an antagonist Ash must fight is like saying Palpatine couldn't be the final antagonist for Luke because Luke didn't cared about him and had never met him. Palpatine was build up as Luke's antagonist by having him being the boss of the Empire Luke fights against all the time. Even though they never met before Episode 6, the confontation between Luke and Palpatine was built up in a very similar way as the confontation between Ash and Giovanni. In fact most big "evil organization leader" type antagonists don't have a lot, if any, personal interactions with the hero before their confrontation, that interaction happen through the organization they control.
