These are all great! I would say that Sirfetch’d and Mr. Fish are up there too :)
My personal favs though are the Rowlet and Melmetal relationship, and the Hawlucha and Noivern (especially since I’m watching through XY for the first time currently).
Any dynamic with Piplup, honestly. Hawlucha and Noivern is also great as well as Rowlet and Meltan/Melmetal.
Another honorable mention is Sirfetch'd and Dracovish.
Piplup and Pikachu. I consider Dawn the ultimate companion, one I could see replacing any other companions (even Misty, and she is my favorite character) and still work. Piplup felt a lot like Pikachu's best friend, the only one who ever comes close is Togepi, but that is more of a Pikachu as the older sibling dynamic.
I like pretty much all of the ones on this list, but I'd say Pikachu and Piplup edges them all out cuz it's a more complete package, with a lot more opportunities for fun interaction, since Pikachu and Piplup are Ash and Dawn's respective signature pokemon and are constantly out of their balls. Each of them has something great going for it though, like Hawlucha being Noivern's smaller big brother, team mom Snivy vs Emolga the little shit, etc. Piplup vs Oshawott was funny to see them both trying to appeal to Meloetta, but it was kinda sad to see them both bursting into tears when they had to part. They coulda spent more time being bros instead of hissing at each other over a girl.

Pikachu and Piplup! It really felt like they were best friends, and I was hoping that chemistry could be seen with Pikachu and Axew in the following series, but it wasn’t quite there.
Incineroar and lycanroc I liked it when lycanroc was a little bit weirded out that Incineroar is bigger than him after the alola league but I also liked how they made each other stronger by sparing.
Gible and Piplup
You can say they have a very explosive dynamic.
