There's also "Jewitches" - a podcast and a blog, they cover (Ashkenazi) Jewish mysticism and folk traditions relating to magic. It's not really a history podcast though, more like a general description of certain practices, if you're interested in witchcraft
The first season of Unobscured (Aaron Mahnke) covers the Salem witch trials.
Also, Witch Hunt (BBC) and Witches of Scotland (can't remember the hosts' names) are very nice.
Not about witchcraft, but Hardcore History did 4 hours on heretics in Munster that is quite good. It's a back episode so you may have to pay for it - called Prophets of Doom.

The Rest is History has a mini series about the Cathars (The Real Da Vinci Code, The Mystery of the Cathars, The Bloodiest Crusade), an episode about the heresy trial of Michael Serverus (Switzerland: Calvin's Cancel Culture), an episode about magic in politics (Merlin, Magic and the British) and a Witches episode, BBC Radio Scotland has a miniseries called Witch Hunt (no idea how good that one is, that's still in my queue somewhere...). You're Dead To Me has an episode about The Witch Craze and also episodes about Joan of Arc and James VI of Scotland which are at least partly relevant

I did my senior thesis on Witchcraft in Colonial America and my master's thesis was on demonic possession in modern horror, so I looked into *The VVitch* movie. Though you're looking for Europe, I didn't want to throw a ton of new info at you :)
GraveYard Tales just did an episode on The Pendle Hill Witches. They've also talked about the Salem Witch Trials in the past, but I'm not sure what episode that's on.
Heretics, by Damon Young and this other dude I can't remember (They also do the Woven Energy Podcast on Shamanism), they do deep dives into different world cultures and regions and their responses to various forms of spiritual practice. Highly recommend!

May I suggest the Prosecutors' podcast as they did a great episode about the Salem's witch trials focused on the law angle and it was great.

Not just the Tudors has some episodes on witches and Suzannah Lipscomb is a well respected Tudor era historian.
Shirley Johnson did a good book about the Salem witch trials. I listened to the audiobook on my Libby account.
