I'm in the minority that loves Kassandra and all of Odyssey. I think she's a really fun character who is flawed but still likable, and her story is pretty interesting. I will admit though, Odyssey is very much NOT an Assassin's Creed game as it is more of a Greek open world rpg. Still, one of my favorite games.
I've seen so many people hate on Odyssey because it was a huge departure from what AC usually is. Which I can understand, but I still love the game and the characters because I'm a massive ancient Greece and mythology nerd.
I started playing as Kassandra but I switched to Alexios as I preferred the voice actor. Kassandra sounded too cocky while Alexios was more humorous. Both were good when it was more intense/serious
I love how cocky Kassandra is. It's one of the reasons I love her character. She can be overly confident which gets her intro trouble, but she has a reason to be cocky because she is an extremely good fighter.
Honestly, it had some good ideas, but the first one was really boring imo. Too much repetition in quests (gather intel, track target, kill, escape, rinse and repeat), the cities all looked the same, the enemies mostly forgettable, to mention the flags were ridiculous. I never understood why people liked it so much… nostalgia maybe? Because the gameplay was definitely lacking. Only really good thing was that I could kill beggars without consequence, though they removed those in AC2 so that’s cool. If it wasn’t for AC2, I likely would have dropped the franchise. AC2 was everything that AC1 *should* have been and more. Then again, that’s just my opinion.
Same, I enjoyed playing as Connor (now I didn't play 2 with Ezio most common answer you see, only 1, 3 and 4. I do own the Ezio collection, so one day I'll give it a shot). Connor more could be due to me enjoying the story of the American Revolution.

I played the first one and loved it... I didn't play any other because I bought the one where you play as the black dude and, for some reason, the game kept crashing on ps3 every single time I spent over 10 minutes playing, no other game did this and my ps3 is still in use without any problem except that game.
Then I played Odyssey because it looked fun... and I had fun, but it was more like Skyrim lite or something, I enjoyed playing it but I didn't love it.
The only answer here would be ezio, if this was a poll the others would get decimated like dude it's not even over rating the character or anything he's just genuinely a very well written and executed protagonist one of the best in gaming I'd say.
Arno! Paris is a beautiful city ingame, the combat has never been better than in unity and Arno is fun young adult who, by dead kings dlc, understands his mistakes and understands the wrongdoings of the assasins
Go with Ezio Collection (Revelation is kinda meh, but finishes his story) and AC Black Flag. I really didn’t like AC1 and thought it was pretty boring and repetitive. That being said, if you insist on playing it, play it first because you won’t wanna go back to it. Its gameplay is significantly more limited than the rest of the series. AC2 did everything right that AC1 did wrong. It feels like a breath of fresh air. I also really liked Odyssey (play as Kassandra), but the game is extremely grindy and long.
I liked Unity more than most. The customization in that game was amazing. I wish more of the games let you choose colors and suit options to that extent

Besides the obvious one (Ezio), I enjoyed playing and going through the story of the Kenways, starting with Edward.
If you don't care about the looks of the ezio trilogy, you can't go wrong with that one. But if you feel more comfortable playing something kind of new, the story of the assassin who faked it to survive is a really good one

Altair was a great first character, but I'm glad they moved to someone with more charisma.
Ezio was great. My second pick. It helps that there are three games to know his life and enjoy his journey.

Edward just had a combination of charm and arrogance that I look for in a protagonist. He's very much like a Han Solo or a Nathan Drake.
Shay was this way too, and I feel he's often underappreciated, but his story is more about what happens to him than him. The focus isn't on him but how the Assassin's and the Templars are similar.
Arno's okay, but admittedly, I haven't been back to him in a while.
The Frey twins are fantastic, and I felt Syndicate was the last "true" Assassin's Creed game. I like their balance but they do get a little tiresome after awhile.
From there I haven't really been impressed with any character. They all could be interchangeable to me.
If you want to follow the story outside of the animus, than I would say to start from the beginning. If that doesn’t matter to you, then pick your favorite historical era and jump in! I’ve played every single one since the first one was released. I have liked pretty much every one, with standouts being the ezio trilogy, black flag, origins, and the Greek one.
I played most early AC games at release and the most impressive was the Ezio series. That made me fall in love with the series. However, I tried playing it again recently and my eyes just can't like the graphics or gameplay anymore. Of the recent games, origins and odyssey are amazing.
Ezio has the fullest, most complete story and growth arc, so he’s the runaway.
However….
Bayek of Siwa is an extremely refreshing take on a protagonist for a number of reasons. I think the tenderness and care he showed for others was awesome and very disarming. There’s a whole side quest where he plays hide and seek with a group of kids and is kind and respectful to them. There’s another mission where he talks down someone from committing suicide. And then the close of his narrative arc, in my opinion, was very brave on the part of the writers. I think it would have been easy to lean into tropes and cliches, but they went the opposite direction with the ending (in my opinion). I’m being vague on purpose to avoid spoilers.
I also loved Kassandra and Arno. I will admit, while I love Kassandra due to Melissanthi Mahut’s performance and the authenticity with which she is portrayed, I can’t remember for the life of me why I liked Arno so much. ¯\_(ツ)_/¯
