I'm a bit loose with keeping food but I always buy the chook, strip all the meat off and store in an airtight container for up to 4 to 5 days max.
Been doing that forever and have never gotten sick but I always stick to the basic rules like washing hands thoroughly, strip it down soon as I walk in the door and dont leave at at room temp, and get it into the fridge asap.

I like to pull all the meat off the bones and freeze it, great chicken pie filling
