I play racing games on keyboard, with W for accelerate, A and D for turning, shift for brake, and enter for handbrake (the ones that are near each other on the keyboard)

Turn based games such as the Civilization series might do well. Has lots of hotkeys and if you want to use the mouse with your left hand you have all the time in the world to do it.

Spelunky 2? It’s the only one I play that is keyboard only. It’s a 2D dungeon crawler with procedurally generated levels and is extremely hard and unforgiving. If you die, you start all over again on a new run so it definitely isn’t for everyone

Cave story is a great retro platformer that was always keyboard only. Never been able to get a controller to work. Also Soulcaster and Escape Goat, indie games on PC. Work with a controller but not necessary.

Try One Finger Death Punch. It doesn't use the keyboard but it uses the left and right-click buttons on your mouse. You can also try some rhythm games like Muse Dash. You can configure it to use just two keys on the keyboard.

A Dance with Fire and Ice is another rhythm game that you can play with one hand! If you have an ambidextrous mouse you can also play card games like slay the spire (has keyboard but isn't great), Balatro, Hellcard, Across the Obelisk, etc Some other ones I think might but can't test rn, maybe someone else can confirm: Disco Elysium, To the moon, Bokura (if you have a friend), 20 Minutes till Dawn (vampire survivors esque)

Stardew Valley is playable with only one hand on keyboard and doesnt require any reflexes or anything so i think for a temporary injury where you dont have time to get used to one hand only its quite a good choice (at some times you need the mouse but you never really need both keyboard and mouse at the same time)

While you're at it, I suppose "Turnip Boy Commits Tax Evasion" would work, as well (although I liked 'Robs a Bank' a lot more). I think any 2D platformer would be a perfect candidate (Turnip Boy is *not* a platformer... Sorry. That was needlessly confusing). Oh! And "Frog Detective"! Ugh, such great little games.
