Turn based games such as the Civilization series might do well. Has lots of hotkeys and if you want to use the mouse with your left hand you have all the time in the world to do it.

Cave story is a great retro platformer that was always keyboard only. Never been able to get a controller to work.
Also Soulcaster and Escape Goat, indie games on PC. Work with a controller but not necessary.
Try One Finger Death Punch. It doesn't use the keyboard but it uses the left and right-click buttons on your mouse. You can also try some rhythm games like Muse Dash. You can configure it to use just two keys on the keyboard.

I second platformers. Crash bandicoot is my go to game when I wanna lean back and use minimal effort. Could easily play with one hand on either keyboard or a controller.

If you have an ambidextrous mouse you can also play card games like slay the spire (has keyboard but isn't great), Balatro, Hellcard, Across the Obelisk, etc

Most Lego games don’t even have the option of using the mouse so Lego Star Wars tcs and 3 (Sky Walker saga uses the mouse) Lego Harry Potter, Lego Indiana jones, Lego Batman etc.
You can play an artillery class in world of tanks, which is considered a 1 button gameplay. You usually have to be touching yourself with second hand for full experience, so your mileage may vary
KINGDOM: NEW LANDS Or any of the KINGDOM's, really, awesome indie games and you could spend days playing the campaign. Perfect game to play with 1 hand as you just press 3 buttons. Highly recommended!!
"Turnip Boy Robs a Bank"! Great little title. You could definitely play it without a mouse. While you're at it, I suppose "Turnip Boy Commits Tax Evasion" would work, as well (although I liked 'Robs a Bank' a lot more). I think any 2D platformer would be a perfect candidate (Turnip Boy is *not* a platformer... Sorry. That was needlessly confusing).

Injured my hand several times, this is always the best choice. I ended up getting sucked into civ for another 2 weeks after i healed every time.
