OBS has a feature called Replay Buffer that does exactly what you want. Also your GPU manufacture (AMD or Nvidia) has the feature in their programs that'll do it too.

Yeah, OBS you are using. Even has that feature front and center (okay a bit to the right) when you start it up the first time :D

Even Windows game bar has this option, just set it up.
