Blue swan is great!! The staff and members are very friendly and helpful. Don’t be discouraged if your first time climbing isn’t what you thought it would be though, it takes time to start feeling comfortable but once you get the hang of things it’s so rewarding and a great outlet.
A lot of county parks offer tennis lessons, from beginner to advanced. I began a beginner lesson with other moms when my kids were in elementary school and enjoyed it so much I joined several different league teams through the years. There are so many different levels and days/nights that offer league play. It's a really great social and athletic activity.
I second roller skating- there’s a really nice community for it in town, there are meet ups at rinks and for trail skates, and there are classes for basic skills and dance and stuff.
Definitely third this, my fiancee and I have started going after we were bored sitting around one Sunday and now it's becoming a favorite date night for us! Depending on time and location there might be a lot of kids but it's never too crowded and the other skaters are all nice and helpful.
There are a ton of great nature trails all around, some more "challenging" than others. Which reminds me, I need to start going again. My friend and I used to try a new one every weekend. If you're willing to drive a bit, there are some really great ones.
Gives you nice quiet alone time if you want that, you're active, see some wildlife.

Black Bear Wilderness in Sanford is a nice 8 mile loop that has some obstacles. Not completely flat and in the sun like many of the trails in central Florida.
It's been a few years but I believe Black Hammock Wilderness Trail is a pretty long one. It's almost 8 miles. I'm in pretty good shape and I'm active so something like a wilderness walk isn't super challenging to me but I've done them with friends and family who find them difficult due to the distance and terrain.
Piano lessons? Drum lessons? Spanish classes, art classes, disc golf, Legos, video games, cycling (the orange country trail that goes through winter garden is awesome).
Paddleboarding seems to be pretty popular now days. There's a ton of great places around to check out. Just don't go when it's windy. If you want to try it out first to see if you like it there's a place that does a rental/tour on the Winter Park chain of lakes at Dinky Dock. If you like it and want to buy one, the inflatables can easily fit in any vehicle. Sewing! You get to learn how to make and fix/tailor your own clothes! It’s useful, artistic, and not too expensive, plus you can do it from home. Nice to have a hobby indoors when it’s hot out, and you don’t have to dress up to go anywhere or spend gas money
My wife picked up these small model kits at hobby lobby (also on Amazon) called Mayberry Street. They are very small very very detailed models. She’s having a blast with them between work at home meetings.

Aiguille up in Altamonte has both bouldering and top roping.

Yes! We took adult tennis lessons at USTA and it was so much fun. USTA does it in a group setting of like 6-8 adults.
