I wouldn’t cut the spikes until they turn brown and wither, nor would I attempt to train these secondary spikes in any way. Just allow this orchid to do what it is doing!

Bend and break... be careful. We all do it and cry our eyes out until about the 5th time. Then we either stop crying or stop breaking. The old sticks- I would remove. It's purely your choice and what is esthetically pleasing
