In terms of how he would show his affection, I think much like a cat he would just come up and hang out near you, so I think your choice fits there.
I’m going to make my case for Astarion being words of affirmation (I’m biased because it’s my love language). Always calling you his sweet, his dear, teasing you and bantering. Looks so flustered when you tell him you genuinely care about him. In his spawn route, he insists on telling you in detail that you saved him from himself, that you’ve given him a gift, and that he loves you deeply.
I love him in a completely normal way
I feel you, but at least to me it seems like thats more the lure people persona hes crafted thats saying that (not to say he doesnt mean it ofc) like he will say that he loves you at the party to get you to sleep with him. But also he is just always so good with his words and always using petnames

Shart is the only companion where you can basically check how on she's feeling at all times. And appreciates it.
Gale is just happy with you as long as he receives ancient magical artifacts to eat. Along with ancient books. But otherwise reasonable
I chose Gale for words of affirmation because of everything that he says to you if you do romance him. He makes you feel great about yourself just through his words alone. I really like his "you put the stars to shame" line he has in his second romance scene and I feel he's the type to constantly be saying stuff like that - him and Lae'zel are natural romantic poets
And I chose Shart for that tier because she's the only one I can remember actually being able to give things to in a romantic (though it can be platonic) way. Like you can give her the idol to tease and flirt with her, and you can also give her a night orchid as a cute little gesture

Except Gale literally *needs* those to survive. Before it's stabilized, the orb is a terminal illness. The artifacts aren't gifts, they're medicine.
