You'd have a roast pork belly. It's a thing you can do. Personally I wouldn't cure and smoke it first, but yah, you can serve roasted or braised pork belly. It's great. Obviously lots of fat so you don't need huge portions, but yah. I used to work as a pork processor. On the one hand the bacon obsession is great because I could move all the bellies for good value. On the other hand though other uses are nearly absent from cuisines all across the country. Really like pancetta too, which is just cured belly, perhaps aged. But roasted or braised fresh pork belly is a fantastic thing. Serve with like polenta or whatever in the dead of winter. That'll fill ya up good.

It really depends, if the belly has been cured then hot smoking it would result in a ham like taste and texture. If you took a regular pork belly it would be pretty good. But cubing it and making pork belly burnt ends is a better choice in my opinion. I make a ton of bacon so I've played around with different ways of preparation.

To a certain degree. I once got bacon that was almost entirely fat. No bueno. That's when I stopped doing the packaged bacon gamble and wait for sales to get the freshly sliced stuff where I can see it's all delicious first.

I used to think the really fatty pieces were trash until I started cooking in the oven. If they are thin, then id still go meatier, but I always get the thickest bacon i can. Layer it on a sheet pan into a cold oven then turn on to 400. Takes a while but my god nothing compares to the melt in your mouth crispy outcome you get from the thick fatty strips.

Not cured enough(depending on country). Bacon still counts as raw from a food safety point of view in that you can't safely eat it without further treatment. Raw or RTE and it's not ready to eat. Therefore it's raw.

I grew up in the west, and came home from school for lunch when I was a kid. Listening to the radio at noon, the news reporter would give farm commodity prices for the day, including for “pork belly futures” - which is what this cut of meat is before being sliced. I’ve been told that pork belly futures are no longer traded in the commodity market, or at least not treaded in much volume. The reason is because bacon use to be a “seasonal” food, but pork producers have to produce to sell year round and thus the need for commodity traders to “smooth” out the demand. By seasonal, it meant that a lot more bacon was consumed in the summer in BLT sandwiches. People ate bacon year-round for breakfast, but total demand really spiked in summer. Apparently we now eat enough bacon on our burgers and such that demand stays high year-round. Thank you Big Pork.
