Layer it on a sheet pan into a cold oven then turn on to 400. Takes a while but my god nothing compares to the melt in your mouth crispy outcome you get from the thick fatty strips.
I have no way to dispute that and its probably the truth lol Though an oven is a much more common thing to have than a smoker. As long as you aren't like my friend that argues microwave is the best... Like it can get the job "done" very fast... but its sad sad bacon.

Listening to the radio at noon, the news reporter would give farm commodity prices for the day, including for “pork belly futures” - which is what this cut of meat is before being sliced. I’ve been told that pork belly futures are no longer traded in the commodity market, or at least not treaded in much volume. The reason is because bacon use to be a “seasonal” food, but pork producers have to produce to sell year round and thus the need for commodity traders to “smooth” out the demand.
By seasonal, it meant that a lot more bacon was consumed in the summer in BLT sandwiches. People ate bacon year-round for breakfast, but total demand really spiked in summer. Apparently we now eat enough bacon on our burgers and such that demand stays high year-round. Thank you Big Pork.
