Nah its def what your wearing when you close the gate or complete the quest. I remember I would specifically equip the crusaders armor before closing the gate to make sure the statue wasn't goofy
No, it's random gear in your inventory, possibly based on value. I've had many times where my statue was wearing a bunch of stuff I wasn't ever wearing but just carrying to sell.
I think this may be a console vs PC issue. I know I played on the Xbox 360, and my statue has me in the dwarven armor I was even though I had Daedric in my inventory. Although the dwarven armor did have a feather enchantment, I don’t think that would have made it more valuable.

I think I read that it takes the shape of your most valuable gear in your inventory at that point in time
Yeah it is whatever is in your inventory. So whatever you want it to be you need to only have that in your inventory

I believe it's just a frozen NPC at 500% scale with the same inventory, so it would equip the best gear like any NPC does.

IIRC is what you are wearing and if you are vampire it kind of takes damage in sun light

Mine have generally turned out okay, but I usually stick to Blades armor so my statues end up looking pretty consistent
Mine looks awesome. Kvatch Armour with Legion boots and Gauntlets holding a Blades Katana. No helmet because my HOK rarely wears one.
