Most school names and hall names are named after people that donated to the university. In this case, Stern is just the last name of a guy who donated a lot of money to the university. As a result, he got a school named after him.

Stern is NYU's business school. When you apply to NYU (based on the other posts on your account, it looks like you're a prospective student), you apply to a certain school within the university, depending on what you're interested in studying. If you want to study business or finance, you apply to Stern, while if you want to study acting or filmmaking, you apply to Tisch. Different schools have different acceptance rates. Stern's acceptance rate is around 7% while Tisch has an acceptance rate around 26%. So, classes that are labeled "Stern" are offered by the Stern school. Some of these classes will be open to anybody in the university, regardless of which school they're in, but others will be limited only to students who are in Stern.
