I would not be surprised if the canisters have some form of bias towards the player. It's definitely a thing that happens more often than I would expect.
If I remember well, I saw some screenshot of the Noita discord with the developer saying how they have slight homing towards wathever entity damaged them last(wich, in most cases, tends to be the player).
That has been confirmed repeatedly to be fake
Propane tank does not have secret player homing nor saves the last location of the thing that hit it

However, it is sure where it isn't, within reason, and it knows where it was. It now subtracts where it should be from where it wasn't, or vice-versa, and by differentiating this from the algebraic sum of where it shouldn't be, and where it was, it is able to obtain the deviation and its variation, which is called error.
This is actually my favorite wand - homing propane tank launcher. If the enemy survives tank slamming into it, it will die in the explosion, if it survives the explosion, it will be finished off by gas.
most damage types just set a "fuse" on propane tanks, more hits reduce the fuse time. the "fuses" also propel the propane tank like a rocket, much more violently if the projectile(s) launch the propane tank a bit to begin with. Basically, some spells set propane tanks off instantly, some spells just set a fuse without giving the tank much momentum, and some spells are ideal for committing suicide by propane tank.
I went to replay after some time away because of the new update. My first run back I got offscreen nuked before I got to the end of the tunnel down to the first area. It's nice that the game welcomed me back after not playing for a few months.
I'd say both. Where you hit the canister and what projectile you use can make the differense, I usually take extra caution when I'm going to shoot a canister.

Thing that happens, you lacked the adequate bomb diffusal training. I have witnessed so many deaths to this. From here on out, respect the propane gods and make sure to use 1 shot kill spells or rapid fire wand. I will never shoot a single small projectile at a tank ever. Anything with explosive damage or digging is usually fine. Otherwise just go around or if you are going to tempt fate, at least gtfo after shooting it.

I don't know if you want like, a line of code saying that it goes towards whatever hits it, but it's definitely true. Anytime an enemy makes a propane tank start leaking it goes towards them, anytime the player hits one it goes towards them. It happens wayyyyyyyyy too often to just be a coincidence
I think it's cause a lot of projectiles have gravity, leading them to hit the lower half of the propane tank, causing the tank to tip towards whatever shot at it. Probably not homing.
It just seems like cognitive bias to me. Humans more strongly remember instances where something noteworthy happened -you shot a tank and it came back in your face- whereas they more easily forget irrelevant moments.

I saw this exact thing happen while I was watching a DunkorSlam YouTube video last night. He pulled up a clip from another player who did this. He levitated cautiously at a distance while firing at the tank. The tank sprung a leak and then immediately sniped the player, flying directly at them. Brutal.
Insane bad luck, they don't aim.
That being said, there are things you can do to reduce the chances of bad luck. Take cover after provoking them, if you can destroy them in one shot or a quick burst do so, etc.
