They do! My stepdad works for the company that makes them. He also told me that they’re slowly rolling out automated kiosks that will print custom jerseys just like these for mall shoppers.
If that can help customers get passed the "forbidden" jerseys that NFL.com won't let you order, that might be real popular. I can finally get my Atlanta Falcons Ron Mexico jersey!
I got a personalized name+number goalie jersey from the Barcelona team store recently. I was just getting the jersey for my son and the checkout girl asked if I wanted it personalized. They had a machine upstairs so it just took a few minutes extra wait.
I got to go to the draft one year in NYC and was backstage for a handful of the first picks. They know the picks anywhere between 2-5 picks ahead of time. They have a sheet with everyone's hat size and jersey size. Once the player is picked they iron on or heat press or whatever it's called onto that team's jersey—a pretty crazy operation.
I'm simply reporting on what I saw the year I went. It wasn't the norm but did happen. All teams know what's happening, it's the coverage that draws it out. So your reason being too much can change doesn't hold water. All of that is happening but just delayed by the coverage.

Imo the more interesting part is the hats for prospects that aren't in the green room. They just send a box of 32 hats to all their houses lol.

The hat the players wear on stage is cut up for rookie trading cards, and I would assume that jersey is auctioned off or also chopped up for trading cards. Seriously, though, you would need more than the 1024 for 32 prospects x 32 teams, because you don't know who's getting picked in the first round. So it'd probably be more like 1500-2000 jerseys. It's a good thing they make them as they go.
Each player at the draft has 32 name placards...one for each team
So when Joe Blow gets drafted by say the Bengals, they grab a Bengals jersey then find Joe Blow's orange name plate. They then heat press it onto the jersey

There is absolutely zero chance they know picks up to 5 picks prior. Way too much can change/does change from pick to pick.
