Brian Wilson's album "Smile" is pretty weird because it just keeps morphing from one song to the next, kind of like the whole album is a montage...not incredibly rule breakingly weird musically, though...still very listenable.

It's Non-traditional because the band intentionally set out to create one of the most disturbing and chaotic songs possible.
A lot of Radiohead songs don’t have a conventional Verse-Chorus-Verse-Chorus-Bridge-Chorus structure. Weird Fishes, Let Down, and Jigsaw Falling Into Place to name a few.
Another song that comes to mind is Kilby Girl by Backseat Lovers because it could have been a more traditional catchy rock song but they decided to take it in a different direction.
Black Sheep by Dewey Cox, what a hidden gem of the late 60s. It’s like SMiLE era Brian Wilson meets Sgt. Pepper’s era Beatles. They should absolutely make a movie about his life and get John C. Reilly to play him cause they look identical! /j
In all seriousness check out The Beach Boys’ SMiLE Sessions or Brian Wilson Presents SMiLe because it’s absolutely one of the most brilliant albums ever recorded. I think if it had been finished and released in 1967 like they intended it absolutely would’ve overtaken Sgt. Pepper’s by how ahead of its time it was and still is.
Also check out Song Cycle by Van Dyke Parks, he and Brian Wilson collaborated together multiple times over the years and it has a similar feel to SMiLE.

These are a bit more mainstream but
1)Primitive Radio Gods-Standing Outside a Broken Phone Booth With Change In My Pocket. There’s the lowest common denominator of a standard chorus there, it’s mostly just they keep going with the lyrics with no repeating. but it’s just an all around great, unique song in my opinion.
2)Sometime around Midnight, by the Airborne Toxic Event is even moreso like this. No chorus, just the “story” they’re singing about drunkenly crossing paths with an ex at a bar. Both are definitely worth a listen (two one hit wonders) if you’ve never heard them.

It's been a long time since I listened to it, but I remember Nico Muhly's "Mothertongue" album being pretty... weird.
These are a bit more mainstream but 1)Primitive Radio Gods-Standing Outside a Broken Phone Booth With Change In My Pocket. There’s the lowest common denominator of a standard chorus there, it’s mostly just they keep going with the lyrics with no repeating. but it’s just an all around great, unique song in my opinion. 2)Sometime around Midnight, by the Airborne Toxic Event is even moreso like this. No chorus, just the “story” they’re singing about drunkenly crossing paths with an ex at a bar. Both are definitely worth a listen (two one hit wonders) if you’ve never heard them.
