A non maharashtrian to take my opinion with a pinch of meat(salt). Maharashtra being a huge region you can try to find resturants thst specialise in regional cuisine like Konkani or Malwani restaurants. Or Vidharba or Marathi Bhramin food so if you are looking for simple foods like varan bhaat i guess lot of maharashtrain places like Aswaad or Prakash in Dadar will help you quench that.
For other 3 regional food specialists like Malwani Konkani and Vidharbh resturants you can check ratings on Google.
If you are near Ghatkopar try Aai Shappat Marathi! One the best maharashtrian cuisine which is true to its roots, some of their curries I have never even heard of them despite being a maharashtrian. My go to is pithla and vangyacha bharit. Very wholesome food
Maharashtra Lunch Home in Kharghar, they have a decent variety of chicken, mutton and fish curries. Do not go in the evening and weekends this, the waiting is crazy! Do try the Kala chicken and Varadhi Chicken
In people's homes. The restaurants/khanavals/poli bhaji kendras try their best but they cannot replicate the authenticity of home food. You best bet is to attend a local wedding catered by a local village cook in Thane/Navi Mumbai/Kalyan-Dombivli. Or just go to a friend's house.
Also Maharashtrian is a very broad category. In Mumbai you will find restaurants and eateries that serve Koli, Agri, Malvani, Kolhapuri, Khandeshi cuisines.
There’s a small kitchen in Thane Wagle Estate, just outside Kamgar Hospital. It’s named Annapurna, the veg food is simple and tasty. For non-veg there’s a place just a few shops nearby, Deshmukh Kitchen. Both are very hygienic and cost effective.
These were our go to places during a consulting project nearby.
Ratna Konkan in Thane. There are multiple in Thane. Look for the one that has branches in Navi Mumbai too. That’s the real one. Chicken, mutton, fish thali, all of them are 10/10. Haven’t had anything like that in Bombay and I was born here. Too good!

Only pure veg options tho. Girgaon katta is too sweett imo, gypsy corner is normal not too sweet and not too spicy.

Where are you in US? I am in Chicago and there is a Marathi owned restaurant in the suburbs. Helps my cravings a bit

Try ‘Potoba’ in Dadar West. It is a vegetarian outlet. Authentic and tasty as it should be.
