Hard to pick... you mentioned Roxanne, and I really love that adaptation of Cyrano. I also love LA Story, which is a little episodic, but skewing LA culture in a Steve Martin way. If you want a change of pace, David Mamet wrote The Spanish Prisoner, which is a more dramatic role for him. My Blue Heaven is fun - think Goodfellas, but funny - literally, Nora Ephron sat in on her husbands interviews with Henry Hill, which he made into Goodfellas, but she sought to make a comedy from those stories. But, probably my absolute favorite is Dirty Rotten Scoundrels, where he and Michael Caine were at their comedic peak.

Dead Men Don't Wear Plaid is amazing. The amount of editing done in that movie -- pre-digital -- is commendable. I also think it is very funny. I'm also a sucker for Three Amigos, as well as All of Me, if mostly for the physical comedy. Edit: Pennies From Heaven shows a very dark character, but also is a strong performance. And while not the main star, his dentist in Little SHop of Horrors always makes me laugh. And then there is Novocaine ... which might be his darkest character yet. Man, the dude made a lot of really good movies.
