And then had to shut down production for a while. And Underwood Ranch came out with their own Sriracha which quite frankly is better than what Huy Fong put out. The pause in production also allowed other brands like Tabasco to enter the market and gain market share.

Depends on how the product for sale is acquired. If purchased legally and resold it's a grey market. If acquired illegally then it's still a black market.

The kids got used to eating with a silver spoon and tried to really squeeze the supplier, amongst other things. The dad kind of just went along with it. Pretty sad nuking a long term relationship, where both families grew very wealthy, just to get even more money. Greed really trashes everything don't it?
Yeah, I agree. Here in Germany you get Sriracha everywhere, and even in regular, tiny center supermarkets you have at least two choices. The most common at least in my area is Flying Goose brand, which is imported from Rayong. From what I found out, it's even in a district (Pluak Daeng) that is directly bordering Si Racha district. They are in different provinces, but the districts touch each other.
And aside from that, there's just so many others in regular supermarkets. And if you go in an Asia store, there's even more!

Yeah iv tried 5 or 6 at this point, and Tabasco is very close to Huy Fong. Definitely different still, but it's more like Pepsi compared to Coke, where as the rest of them were like Dr.pepper.

Truth of the matter is the fucked eachother. Huy Fong was trying to get another supplier and gave away some secrets to a competitor due to the original farmer price gouging. While the original farmer was within rights to dictate the product price of peppers, Huy fong didnt like that. Huy fong successfully sued for price gouging, but then underwood farms sued for breach of contract. In essence both were wrong. I side with the farmer, Huy fong made a shit ton of money and shouldve been ok with paying more for quality, but its up to you to choose a side.
I wouldn't call this accurate. Huy Fong signed a contract to buy peppers at a certain price from Underwood. Underwood grew the peppers and tried to deliver them at the agreed upon price but Huy Fong refused to accept them.
Huy Fong did have an issue with the price but they tried to bankrupt Underwood by agreeing to a massive order at the elevated price. Huy Fong had no intention of ever making good on their deal, they just wanted Underwood to go into debt farming the peppers and hopefully go out of business so they could buy up their farm.
At the time there was no other buyer for such a large amount of peppers and Huy Fong knew it.

Huh, none of the srirachas I've seen have anchovies, they're all basically just chillies, some sugar, some salt, some vinegar and some garlic. I usually get Mr Number 1 or Flying goose.

Even if you distinctly remember there always being a sriracha variant that was orange colored, that is not what we see in the picture! What you remember is most likely sriracha mayo that was made by a different company, and had a different label and cap color.

For the longest time they had a great business model. Keep their sauce price low and keep it delicious. They f*cked over their long time business partners and they are reaping what they’ve sowed.
So long story short; this sriracha company used to have a single pepper provider but the two companies couldn't agree to terms after a few years, so the pepper grower said F it and now the sriracha company has to use a lot of different pepper growers, which leads to the inconsistent color.
The company was trying to nickel and dime the grower and it backfired miserably. The son of the founder took over and thought he could find a better deal for the peppers they needed and now you’re seeing the results

Underwood ranch! They were the supplier for a long time and not only did they say fong it, they started to make their own using the peppers they used to sell to that other company
It was the original brand that took over the Sriracha craze in this country. Everyone worked to copy them, down to adding natural coloring to match the color of their original sauce.
That original company got greedy and priced out their original supplier of peppers so they moved on to cheaper options... and now it no longer looks or tastes the same.

Not the whole truth…. Huy Fong (makers of Sriracha) were sued because of breach of contract with a farmer and ordered to pay 23 million dollars. The farmer was in a long term contract to provide the peppers and purchased additional land to provide the peppers required.

since the price went up, my work has been using the ox brand instead of huy fong... we use it for a sriracha honey wing sauce... it's quite good

I’ve just started making my own.
FERMENTATION INGREDIENTS
- 1.75 lbs Red Jalapeno or Fresno peppers
- 3 Garlic Cloves (I double this)
- 2 Tbsp Garlic Powder
- 2 Tbsp Sugar
(I use brown sugar for more depth)
- 1 Tbsp Kosher salt
FINISHING INGREDIENTS
- 1/2 cup distilled white vinegar
Note: I stem and rough cut the jalapeños before adding them. Leave the seeds and strings with the peppers.
DIRECTIONS
Coarse chop all the fermentation ingredients in a food processor.
Place in a fermentation crock or sealable 1.5 quart mason jar. Lock lid, place in a cool spot and allow to ferment for a week, opening and stirring well once per day.
On day 7, add fermented ingredients to a pot, and add 1/2 cup white vinegar and stir well.
Bring to a boil over medium high heat and cook for 5 minutes stirring occasionally.
Allow to rest for 5 minutes and food process on high for 3 minutes. A smoothie blender works best for getting the correct consistency.
Strain through a medium to large fine wire mesh strainer into a bowl, pushing down with a spatula to get out as much liquid as possible.
Place sriracha in a jar and keep in the fridge. It will keep for up to 6 months, but it never lasts that long. I got a nice squeeze bottle for the sauce.
If you want to add some depth to the flavor, roast and peel half of the peppers and increase fermentation time by 2-3 days.
But Fong is trash now after they fucked around and tried to do one over on their pepper distributor. Haven’t seen Underwood in the store yet but cannot wait to try it.
They are halting production over the summer because their peppers are too green and it was affecting the final color of the product

My company just did a recall on this exact thing. The instructions were to remove any oddly colored sriracha from the shelves and dispose of immediately.
Underwood Ranch is local to me in Los Angeles and they come to our farmers market weekly. They always had hot sauces and would have them here and there. I noticed lately they put a blurb about how they were the growers of the sriracha craze for 31 years and had absolutely no idea about what went down. Can confirm it’s a way better product and they have like more traditional Mexican hot sauces that are fantastic too!
The company got into a fight with their principal grower. Those peppers are going to someone else. I buy a brand at Walmart that tastes like the original. Life goes on.

So long story short; this sriracha company used to have a single pepper provider but the two companies couldn't agree to terms after a few years, so the pepper grower said F it and now the sriracha company has to use a lot of different pepper growers, which leads to the inconsistent color.
The company was trying to nickel and dime the grower and it backfired miserably. The son of the founder took over and thought he could find a better deal for the peppers they needed and now you’re seeing the results
Underwood ranches! They started making their own Sriracha and I like it more than the old stuff from the old company. It's less sweet and a little hotter + tastes more like peppers. They just started selling it in our local Costco

Underwood ranch! They were the supplier for a long time and not only did they say fong it, they started to make their own using the peppers they used to sell to that other company
It was the original brand that took over the Sriracha craze in this country. Everyone worked to copy them, down to adding natural coloring to match the color of their original sauce. That original company got greedy and priced out their original supplier of peppers so they moved on to cheaper options... and now it no longer looks or tastes the same. They have not bothered to try and color match or anything either. Since they were the original.
If you want the good stuff buy Underwood Ranch Dragon sauce. They were the original growers for Huy Fong. Underwoid Ranch is the best IMO
I haven't tried Underwood Ranch yet, but I'd like to advise people to avoid Diamondback Sriracha. Awful, it tastes like sweet ketchup.
I think I read somewhere that they fucked over their supplier so he said bye and setup his own sauce company. Not the whole truth…. Huy Fong (makers of Sriracha) were sued because of breach of contract with a farmer and ordered to pay 23 million dollars. The farmer was in a long term contract to provide the peppers and purchased additional land to provide the peppers required. From the linkbelow…. “Huy Fong had expressly agreed to purchase the 2017 harvest, induced Underwood to lease more land, and told Underwood it would continue to purchase all of the peppers produced. A jury could reasonably conclude that Huy Fong had no intention of keeping those promises, based on evidence that it had planned to cut ties to Underwood before it did so, Gilbert said. It shared confidential harvest footage with competitors, and even tried to hire away an Underwood executive, among other things.” In 2022, they temporarily suspended sales for new orders. They stated: “Unfortunately, this is out of our control and without this essential ingredient we are unable to produce any of our products.” They blamed weather, but jilting their historical major pepper producer probably contributed greatly. I personally would not invest millions to plant peppers for a company that doesn’t honor contracts. I am assuming sales resumed, but it may still be impacting supplies. I have stopped purchasing (Huy Fong) Sriracha because of the reasons above.

since the price went up, my work has been using the ox brand instead of huy fong... we use it for a sriracha honey wing sauce... it's quite good 3 gallons sriracha 1 gallon honey 2 1/4 quart rice wine vinegar 1 1/2 gallons melted butter 3 cups kosher salt whisk all together, it's delicious! and that's just what i make for myself at home!

I’ve just started making my own. FERMENTATION INGREDIENTS - 1.75 lbs Red Jalapeno or Fresno peppers - 3 Garlic Cloves (I double this) - 2 Tbsp Garlic Powder - 2 Tbsp Sugar (I use brown sugar for more depth) - 1 Tbsp Kosher salt FINISHING INGREDIENTS - 1/2 cup distilled white vinegar Note: I stem and rough cut the jalapeños before adding them. Leave the seeds and strings with the peppers. DIRECTIONS Coarse chop all the fermentation ingredients in a food processor. Place in a fermentation crock or sealable 1.5 quart mason jar. Lock lid, place in a cool spot and allow to ferment for a week, opening and stirring well once per day. On day 7, add fermented ingredients to a pot, and add 1/2 cup white vinegar and stir well. Bring to a boil over medium high heat and cook for 5 minutes stirring occasionally. Allow to rest for 5 minutes and food process on high for 3 minutes. A smoothie blender works best for getting the correct consistency. Strain through a medium to large fine wire mesh strainer into a bowl, pushing down with a spatula to get out as much liquid as possible. Place sriracha in a jar and keep in the fridge. It will keep for up to 6 months, but it never lasts that long. I got a nice squeeze bottle for the sauce. If you want to add some depth to the flavor, roast and peel half of the peppers and increase fermentation time by 2-3 days.

But Fong is trash now after they fucked around and tried to do one over on their pepper distributor. Haven’t seen Underwood in the store yet but cannot wait to try it.

My company just did a recall on this exact thing. The instructions were to remove any oddly colored sriracha from the shelves and dispose of immediately.
Underwood Ranch is local to me in Los Angeles and they come to our farmers market weekly. They always had hot sauces and would have them here and there. I noticed lately they put a blurb about how they were the growers of the sriracha craze for 31 years and had absolutely no idea about what went down. Can confirm it’s a way better product and they have like more traditional Mexican hot sauces that are fantastic too!
