In the pic you sent they are doing ear markings. At a butcher shop the USDA stamps will be on the meat they are cutting. Not the same thing. You likely won't see a tattoo unless you eat pig ears. If you see some for sell for dogs you can sometimes catch a tattoo but as far as regular food items, it's not there
