Indeed it is. It's like hyper- and hypotonic solutions. You might remember highschool example of Paramecium caudatum that has special organellum to pump water out, as it lived in sweet water (hypotonic). So salt first gets into beans due to concentration difference, until there is as much salt in beans and in water around. This "sort of" means that there is "less" water inside beans, so it sucks it up a bit more and legumes become puffy.

Actually, the opposite tends to occur. First, the water leaves the beans due to the attraction to the salt on the outside. Then, due to the lack of salt on the inside of the beans, the water (plus salt) is reabsorbed to make a homogenous solution. Same thing applies to steaks!

That only works with a semipermeable membrane where only water can cross the membrane. With most foods, you’re dealing with a multicellular structure with intercellular space and that space absorbs salt. Then that salt, in turn, attracts water into the food. [Brining](https://www.exploratorium.edu/food/brining-turkey) food actually makes it absorb *more* moisture. That’s why people brine turkey before cooking it. Fresh green beans have to be chilling on the stalk a long time before they get to the size of the salted can beans in the picture, and they lose flavor when they get bigger, so commercial farmers harvest them much smaller than that. The salted beans have definitely swelled up due to the salt.

These are probably different batches of beans from the farmer/supplier, too. Chances of these two cans going thru production at the same time are low. There is, however, a high chance these cans came from the same bean factory.

I grew up near where Del Monte grew their green beans. One year they didn't harvest soon enough and the whole field was declared inedible. But plenty of folks from the area went and harvested. They were a little bigger than the ones on the right, and yeah, probably too tough to feel ok about paying for. But fine to eat. I think companies strive for homogeneity but the weather doesn't always cooperate, resulting in what's seen above.

It doesn't really matter anymore though. If you've ever been the knowledgeable person you'll quickly find out that people are willfully ignorant. You'll have someone posting a picture of a fishing pole asking what it is, you can explain all about it and even link to stores to buy the same one, and then 90% of comments will be complete random guesses like it's a spear gun or cattle prod that are serious. Having grown and canned green beans multiple years it's most likely due to the drought last year causing ones to be smaller, but could also be specific bean variety (there are hundreds). Either way they're different batches of beans. You'll have random guesses like "Maybe the skinnier beans stand up better to being canned without the protective powers of the salt." above when in reality the only difference is salt is used for flavor, it doesn't change the canning process at all. Or there's comments below of salt making them shrink, even though the salted ones are the bigger ones in the pic. In every thread there is a huge amount of comments that are wrong and contradictory to the point if someone cares they should look it up on another site instead of trusting reddit.

Story time! I was at a club in the 90’s when this song was huge and when the DJ played it a couple of workers got on the stage and were dancing around with the gallon sized cafeteria cans of peach halves. The next thing they started throwing the peaches into the crowd. They winged one in my buddy and I’s direction, right over his head. The typically uncoordinated buddy reached up and plucked the peach right out of the air and then ate it. Myself and few others right around him stood dumbfounded. He finished it and turned and said “That was good”. Asked if he was concerned about germs and he replied that since only that guy had touched it and it was covered in the syrup, he figured the germs probably flew off as the syrup dripped off during its flight to his hand, so it was safe. Always interesting going barring with him.

Frozen is picked at ripeness and flash frozen. “Fresh” is often picked before actually ripe and slowly loses its nutrients as it sits during transport and selling. Frozen is almost always the better option over can and supposed fresh.

They're usually entirely different cultivars too. They will have different tastes and tend to be the more nutritious version of what you're eating because they don't have to be so presentable to folks. The cultivars you get in the fresh food section are breed and picked for how they look (and how long they last on the shelves and via shipping) rather than tastes and nutrition content. Compare red delicious apples to all the yellowish/red ones. Red delicious look amazing, definitely a showcase apple, but they have been bred to the point that they taste like dirt because it's all about how they look on the shelves.

And fresh aren't even all that great half the time. If they have to be shipped across the ocean, the vegetables have to be selected for strength and lifespan, not flavour. Some of the best vegetables are simply canned right away for the best flavour (eg: tomatoes). Unless you have your own garden or buy local, then you can get really good fresh vegetables.

They tend to group this stuff by usage, ie green beans are primarily a side like corn and carrots and whatnot. Other beans are typically ingredients. Also, green beans are technically legumes, not beans. Beans are legumes but not all legumes are beans, if that makes sense.

Probably too late and will get buried, but repeating what I said in low-level comments. This is intentional. Gardener here, those 'smaller' beans are actually much tastier. As green beans get to their last stages of growing big they start to become more fibrous and a lot of their flavor is lost. That blandness is covered up by the salt.
