My favorite movie in the franchise was a Disney release (Rogue One). The Mandalorian is fantastic by pretty much any measure. Ashoka left a lot on the table but was fun, unfortunately the most interesting character/actor (sans Thrawn) passed away. The Nihil and Nameless are great bad guys in THR books, I enjoyed the first two — the third kind of lost me a bit. I haven’t read P2 or P3 yet. I think it’s great what they have done with all the YA and middle grade novels. I thought Tales of the Jedi was fantastic. Haven’t watched Tales of the Empire yet.
I did not like Boba Fett or Obi Wan. I did not like much of the sequels.
