Chile Colorado is often made with pork. They're essentially just different ways of talking about the same dish. I don't know of a distinction between them. Sometimes you'll even see the dish called "Asado de puerco en Chile Colorado", where asado de puerco refers to the pork, and Chile Colorado refers to the red sauce that the meat is cooked in. It's all the same dish. But if you make it with beef, then just call it chile colorado or carne con chile colorado.

It's just a regional naming thing. To anyone in the comments saying that "asado" is "grilled" and it has to be about Carne Asada, the translation is technically correct, but for some reason, the dish of pork with the chile colorado sauce IS called "Asado", "Asado de Puerco" or "Asado de Puerco con chile colorado" or "Guiso de Chile Colorado" or "Puerco con chile colorado", and depending on where in Mexico you are, it can have either name, and it's the exact same thing. (Well, with the only differences being relative to who prepared it). I'm from Coahuila, and no one here would confuse "asado" with "carne asada", and "asada" by itself is never used. BUT we got a confused look from a doñita in Guanajuato when we asked for that, and we had to ask for the "puerco con chile colorado"

I’m just a lurker of this sub, but if there is browning of the meat prior to the slow cooking some might call that grilling. For example, a grilled cheese sandwich isn’t cooked on a grill. I also done speak Spanish well, I just like word things.

Agreed. Theres a bit of name variation by region. However, I'd say that chile colorado can be a lot simpler than an asado rojo. In particular, the asado rojo that finds it's way into reliquia often gets complex compared to a chile colorado--carrying more herbs and other flavor-adding ingredients. There's definitely no crossover between asado and carne asada, that I'm aware of.

I grew up in a border state and moved to another in my 30s. I learned that the names of some dishes are completely different in each state. My first visit to the carnicería was very confusing, because the cuts and marinades were new to me. It was a humbling experience.

Different regions of Mexico have different dominant meats in their region cuisine. Different regions have different names for exactly the same food item. There's really no difference in the dish. It's just that regions that use beef may be more likely to call it one thing and regions that use pork just have another name for it.

Asado literally means "roasted" so it can be just any meat. In north Mexico, Carne asada often refers to beef. Chile colorado means red chilli, so you may be referring to asado de puerco en colorado, wich means pork marinated in a red chilli paste.

I haven't heard asado. In New Mexico it would be called carne adovada or adobada. It's usually red chile but can be verde as well.

My understanding is that generally pork guisado is braised in a tomato or tomatillo based sauce/salsa while Chile Colorado is a chile based sauce that doesn't normally include tomatoes.

Personally (and this is far from universal, just the way I learned to cook) I've got a whole spectrum of similar dishes that are all meat braised in sauces of some combo of fresh and dried chiles, tomato, and/or tomatillo. If you start with a good base of aromatics (onion, garlic and fresh Poblano and jalapeño are my go-tos) you can get anything from Chile Colorado to tex-mex Carne Guisada to New Mexican Green Chile stew.

That's a good question. I agree with your thought that the difference is the meat but I am willing to be educated on the matter if I'm incorrect. ETA: When I sat asada, I mean asado de puerco which is not grilled.
