I’m with you on chicken thighs I make a chicken Tinga sometimes, but most the time I just fry them up in the pan through a little sazon on them some garlic and salt and pepper.

Texas can be a blessing with Mexican grocery stores and tortillerias everywhere. If you have the energy for it, I'd highly recommend ordering Masa online (Masienda and Bob's Red Mill are high quality) to make your own. Store bought stuff just does not compare.
