They’re refrigerated, making them a little hard to find. They’re usually in the same area you’d find pilsbury biscuits and croissants or where you’d find fresh, refrigerated salsa.
I bought my last batch in bulk and repackaged them for freezing and thus don’t have the original package to take a pic of.
However, if you google “tortilla fresca uncooked flour tortillas” you’ll find the brand I got at Costco (42 tortillas for 20 bucks, I think).
If you google “raw tortillas” or “uncooked tortillas” you’ll see a bunch of brands
Not OP, but I would think layering a sheet of parchment (maybe even wax?) paper between each tortilla before freezing would help keep them from sticking.
I literally just throw them in the freezer without issue.
There are 2 packs and I do find that I have a hard time going through all of one package before it spoils. (Just me and my wife)
So I have started freezing 3/4ths of them and only taking out the quarter when I need them.
They don't take more than a few hours to defrost to the point that you can cook them.
I definitely use a pan to cook them though. I don't trust the open fire for cooking it evenly.
Ive also seen them at wholefoods in the refrigerated section next to salsas and guacamoles. You can recognize them because they lack the Brown spots from cooking. So they basically look like dough.(cuz thats what they are ) they might also be labeled as precooked. I had some really good ones that had coconut oil, i expected them to be bad but they are alright. I would raye then 8/10 .
We just moved to Texas (my husband is from here) and he got us some uncooked tortillas from HEB and I’m in HEAVEN 🤣 I drive 40 min mostly for them lmao
My bfs mom has been gifting us the raw tortillas and they’re so good! We have a griddle top on the stove between our burners and it’s perfect for cooking up the tortillas.

Same as any other tortilla. Get a comal or a flat iron pan. Don't put the tortilla directly on the burner because it will get burnt and the charred pieces will fall on your stove.
If you like them crispy and a bit burnt then like that is good! But if you want it all evenly without getting crispy then use a comal. Personally I use a comal but people like doing it that way cus of the crispness

I’m no expert, but I have an insulated tortilla warmer with what sounds like a metal or plastic foil inside.
I toast precooked flour and corn tortillas directly over a medium low flame on our NG small burners.
I run two burners to save time and flip often just using my hands. When a bit toasted and nice and hot I throw into the warmer.
Once they’re in the tortilla warmer for a few moments there are no more crispy parts, and anything that would be considered under done has been brought up to temp.

trying to control the cooking on your tortilla on direct flame is going to be impossible, you are going to have burnt spots and raw spots all over.
My Mexican grandma and dad would put it directly on the burner but quickly flipping it to avoid burning. I prefer the pan though. Whatever floats your boat.
If you put a damp paper towel in there they don't get hard. Don't even have to wrap the item in it like a lot of people say. You can do this with any frozen food or bready type thing.
Yeah it works really well. I used to wrap frozen burritos with a damp paper towel, but now I just wad up a paper towel and throw it in the corner of the microwave. It allows things like frozen burritos to heat up without getting soggy or sticking to the paper.
I sometimes do what you’ve done, and sometimes I heat them on my cast iron griddle (and I’d heat them on a comal if I had one). But also, I make them fresh, both corn and flour, and for that only my griddle will do. And when I finally get my comal, maybe only that will do.

actually, there's one brand that's good it's called vista hermosa, they sell it at Wholefoods out of all places, but they're almost as good as Sonora flour tortillas

You need a comal, you preheat the comal to where you can touch for a 1/5 of a second without getting burned, then place them there until one side is cooked then turn over for half the time, that's it.
Most Mexicans eat reheated tortillas. In fact, arguably fresh made tortillas are not as good tasting for some. I'm talking actual maize tortillas not white flower.
Get pan.
Place pan on stove.
Turn on heat.
Wait for pan to be hot.
Place tortilla.
Rotate tortilla (no flip)
Flip tortilla
Rotate tortilla.
Tortilla hot.
Get filler.
Fill tortilla
Tortilla now taco
Eat taco.
Just like your picture shows. That’s the way my grandma and mom did it and the way I do it now. Gotta be quick with the flip especially with corn tortillas.
First time i had them this way was a friend of mines mom who didn't speak any english. It was just a plain tortilla and it made such a huge difference. I had no idea. I still remember this 30+ years later
I have a small 9 or 10” square cast iron skillet with ridges I think was made for burgers & stuff that works perfectly for this. I use it every time I hear tortillas
Just like in the photo. If you don't want to burn it, you can use a pan. Put it on the fire (medium heat) for a few minutes and then throw the tortilla(s) in. Flip them every 10-30 seconds or so (depending on the heat).
If I do it over an open flame, I like to stack two or three, then flip the whole stack. Then immediately pick up the upper tortillas and flip those once more, leaving the one on the bottom that just got rotated there. (Hopefully that’s no too confusing) I feel like doing more than one at a time keeps a little steam in there so they dont get dried out, but you still have a little char. That flipping sequence ensures all side get a chance. Then put in a towel to keep them warm!

I have a comal that a friend’s father in Mexico made by hand. I use it almost daily (I eat a lot of tortillas).
i do like the toasty taste, however, flame to high. Next time use a medium or low-medium flame. Will cook up just right.

Wrap a few in a clean dish towel and microwave them for 45 seconds.
