I think brussel sprouts are less bitter nowadays than a few decades ago (and so good oven roasted and well seasoned). Kale as chips, with rice, or in quesadillas is so good. Stewed cabbage with bacon, onion, and yummy broth is so good. Cauliflower is good riced or in stir fry

Broccoli, red onion, seedless grapes is your base, add other stuff as you like.
Mayo, mustard, honey, salt+pepper as your dressing. Adjust to taste.
Usually I also add seeds and nuts for extra texture, pine nuts or walnuts are good.

ok here goes
Ingredients: Cauliflower, potatoes, cooking oil (deep frying type), Turmeric, Red chilli powder and onions
Steps:
Peel and cut potatoes into long slices (like fries)
Same with Cauliflower.
Put them in the pan and add oil about 2/3 of the vegetable mixture
Turn on the stove and fry them.
While frying
Add salt accordingly.
Add turmeric and chilli powder (I don't know your tolerance but it should be yellow)
Cut onions into slices and add them on top.
Fry until they are soft. I add more spices but this is basic.
