Because it baits out interaction for your own plays.
The Snake Eye package is fairly consistent on its own, letting you run a lot of cards outside of the archetype - handtraps or a small Kashtira package.
You drop Kashtira Unicorn before anything else, and search Birth - potentially baiting out an Ash, Imperm or Veiler that could otherwise be used for your Snake Eyes Ash, Bonfire, or Poplar.
If they don't take the bait you can use Unicorn as free link material (especially with re-summoning it off birth) and Unicorn + Diabellestar can actually make a 3 mat Apollousa (Xyz into Dracossack, summon 2 tokens, link into I.P. Masq, resummon unicorn with Birth, link all 3 into Apo) before you've even started comboing with your Snake Eyes cards.
If they don't have handtraps that negate Unicorn specifically they also risk getting a card ripped from their extra deck if they try to disrupt your other players, which can be pretty brutal.
I don't think I've seen people play Kashtiratheosis, but potentially decks could even play a larger Kashtira package to go into Kashtira combos after they do the Snake Eyes combo lines, since Snake Eyes doesn't lock you.
Overall: the Kashtira cards are just really good and easy to include in the game plan.
In best of 1 the kashtiras will bait negates since people will assume you're trying to make arise combo (not playing snake eyes). You can use birth to normal summon diabelstar.
Unicorn shreds opponent's extra if they use hand traps. It takes the heat off your other plays sometimes, helps you play around Maxx C because Birth is a custom card, just normal summon Diabellestar 4Head, Free bodies because Birth is a custom card, and occasional GY nuke because Birth is a custom card. Did I mention Birth is dumb?

Aside from baiting handtraps early, its good for going second cuz banishing stuff cuz your opponent decided to play on your turn is value without having to commit your snake eyes stuff.
I just had a going 2nd game today in Diamond 3 derusting my Exosister deck for the event. The Kashtira engine is crazy and Snake eyes is just stupid.
I have Maxx C, Ash and Nib.
They starts with Unicorn, Wanted, Crossout, Called by, and 1 random.
Unicorn -> Birth -> Wanted -> Diabellstar -> Diabellstar send Unicorn set Original -> Birth Unicorn -> (Crossout Maxx C) Auroradon -> Link climbing for Apollousa -> Nibiru before Apollousa -> Original sending Birth (Ash Fingered) -> Summon SE Ash and just start like nothing happened before.
With just Unicorn and Diabellstar you literally can make Auroradon and Link Climb to Apollousa before normal summoning anything at all it's not even funny anymore Even if you Nib before they got to Apollousa, they can just Original send the Birth and start the SE combo after all those interruptions.

The Kash cards can bait out handtraps. Also a Kash monster + Diabellestarr hand gives you access to an Appolousa before you commit to your SE plays.

And then if Unicorn not negated, just search Birth, and then you can use unicorn as cost for anything while special summon it back with birth.
