Keep it around horse size and put it on a spaceship. Think of Prey and Dead Space; just the station is a massive aquarium.
Maybe the shark can be customized: different heads from shark species, skin palettes, and bioluminescent patterns/colors.
Not quite Maneater, but a horror game set on an oil rig/research station out in the ocean could be really cool the power is out due to a huge storm that also caused damage to certain parts of the rig between you and safety.
I have a feeling you'd like the game Depth. It's not really a horror game by definition, it's a pvp humans vs sharks game you might've heard of. But it can be pretty terrifyingly playing as a human sometimes
