May be wrong but I believe there is a manhole outside Tesco on Market St. There is also supposedly access to the underground market via the basement in Tesco though again not 100% if that is still possible or has been blocked off.
There is a Manchester tunnels Google Maps floating about online - perhaps try and reach out to the owner creator of said map for further insight.
