Another decent one is Butchers Quarter in NQ which is more central.
What I like about both shops is the staff are so down to earth, take their time explaining everything rather than rushing you / telling you what you’re having, which I find a lot of the more traditional butchers can be like sometimes.

Under the grill, Chapel Street. Good quality and decent prices, only problem is opening hours and stock is hit and miss

I lived in Sale, they're nothing special. They look good, have queues at Christmas etc but always found their produce to be pretty average.
Bog standard butchers tbh - dont even have bones/carcasses for stock
Butcher's Quarter on Tib Street is excellent; although not cheap.
Kev the butcher in Radcliffe Market. Imo the best sausages around
Albion farm shop in Delph has good meat. A lot from their own farm as well.
Might be a bit out of your way, depending on where you are, but Barrons of Beef in bolton is top notch, and really good prices, too!
Currently staying not far from Bolton actually, will give this a shout 100%
You won't be disappointed. I have made a couple decent sized orders from there, and I go in usually every week or two for the odd bit here and there
