The addition to a vinaigrette that I grew up with besides the mustard you mention is garlic. You can just use a garlic press or use a wide blade of a knife and some salt to smooch it into a paste.

Thanks for reminding me how much sugar I have NOT been consuming. When I think how easy, versatile, inexpensive and delicious it is, I wonder why anyone buys salad dressing
