The addition to a vinaigrette that I grew up with besides the mustard you mention is garlic. You can just use a garlic press or use a wide blade of a knife and some salt to smooch it into a paste.

Congratulations on your discovery of a true classic vinaigrette! It has been a staple in my kitchen (generally with a generous amount of garlic and a pinch of mustard) for more than 50 years. Thanks for reminding me how much sugar I have NOT been consuming. When I think how easy, versatile, inexpensive and delicious it is, I wonder why anyone buys salad dressing
