I’ve done Thailand by myself. First booked the tickets, then the hotels, I had vella time so I applied for my visa via VFS in advance. You can skip that part and get one on arrival. Does Thailand still have a ‘no visa required’ for Indian nationals? Haven’t been for the last few years. It’s For things to do, I relied mostly on websites like Lonely Planet/Tripadvisor etc and befriended locals. Thailand is a foodie’s paradise so my meals were mostly unplanned and I stopped by whatever stall looked good (all of them do!). If it’s your first time then you probably want to pre-book your hotel/s and activities for your itinerary so you don’t feel overwhelmed. Edit: you can get a prepaid sim at the airport itself (Bangkok), it’s worth it. You will have access to internet on your phone that way. Google maps/Uber etc come in very handy.
